Warming You From the Inside: Carrot-Ginger Soup

I originally discovered this recipe on this beautiful blog, Armelle and she credited to Better Homes & Gardens. I changed several of the ingredients and made it my own. Much to my husband’s chagrin, this is how I cook. (He loves my cooking, but when I don’t write it down, then can’t duplicate it exactly and that is where the chagrin comes in.)

This soup is is a “potage-type” soup that uses an immersion blender to smooth out the cooked carrots and carmelized onions. Perhaps it’s the winter vegetables or maybe the ginger or the creaminess or a combination thereof. My version and the original calls for half-and-half, but I want to try switching that out for a cup of canned coconut milk. The only danger in that would be that I might have to add a drop of Young Living lemongrass essential oil also.

Carrot Ginger-Soup

2 T extra virgin olive oil

1-2 large onions, sliced thinly

1-2 T sugar

1 1/2 pounds carrots, cleand

1 c pumpkin pulp or puree

6 c bone broth

1 c half-and-half OR 1 c canned coconut milk

2 drops Young Living Vitality ginger eo*

salt and pepper to taste (can substitute 1 drop YL Vitality black pepper)*

Caramelize the onions–in the a large skillet, heat oil over medium heat. Add sliced onions, sugar, and pepper; reduce heat to low and cook covered for 30 minutes, stirring twice. Add drops of YL ginger eo. Cook uncovered, 20-30 minutes more or until onion is golden brown, stirring occasionally. Divide in half.

Meanwhile peel carrots adn cut in 1-inch pieces. In large saucepan combine brothe, carrots, and pumpkin. Bring to a boil and reduce heat. Simmer, covered, 40 minutes or until carrots are very tender. Add half of the caramelized onoins. Purée until smooth with an immersion blender. Add half-and-half or coconut milk. Heat through. Add ginger essential oil and season to taste with salt and pepper as desired. Top with remaining caramelized onions.

*Add essential oils at the end before serving and you will not only get the flavor, but the benefits of the oils.
